
CHAPTER 7. INCOMPATABILITY.
In grocery stores lately there are appearing lots of products for exchange meat and dairy products: beyond meat beef ground based on plant. vegetable oil butter, vegetable burgers et cetera.
I tried to make my ordinary meal – STUFFED PEPPERS, recipe was mentioned before: rice was used and ground natural meat. Everything was fine. But, this time I decided to experiment with non-beef ground beef. I thouroughly mixed all ingredients as they should be. And Disaster! When we tasted the peppers, they were not the same. Conclusion: natural and unnatural products do not want to be mixed. INCOMPATABILITY!
As in life, Nickolay Makarovich Oleinikov (1898-1937) noticed in his humouristic poem
“INCOMPATIBILITY of CHARACTERS”:
“Once Vitamin,
happened to be in Tmin,
started to dance,
doing salto mortale,
and kiss himself.
“Cretin” thought Tmin.”
So, be careful about CHEMISTRY of Ingredients! Otherwise we are becoming CRETINOS IMPOSSIBLOS!

CHAPTER 6. COMPATIBITY or CHEMISTRY of INGRIDIENTS
While I am composing my recepes, FIRST of ALL, I am thinking of the compatibility of ingredients, or the chemistry of them. Let’s take any kind of bread with the molasses.

Thousands of recipes in INTERNET but, mainly, for making bread by hands, i.e. mannualyy, but I need for bread maker, my devoted mechanic helper. This is why I am composing my breads myself, considering what kind of flour we prefer, what kind of sugar or honey, butter and so on.
1) rye bread flour – 2 cups, 2)regular bread flour-1 cup,3) milk SO NICE-1 cup, 4) melted butter-3 table spoons, 5) honey – 2 spoons, 6) molasses – 3 table spoons, 7) 1 big white egg, all mixed with the wooden spoon. This mixture goes first into the breadmaker pan, the dry ingredients and on the top- dry yeast – 2,5 teaspoonfuls. Press the menu button on Number 7- bread with molases. In 3 and a half hours it’s ready, you see at the picture above to the left.
Having knowledge about the chemistry of ingredients while cooking is of the same importance as in life building up the relationship with somebody. Oh, CHEMISTRY, CHEMISTRY! Where are you? So many people are looking for you and cannot find it, unfortunately. And those, who have found it, having tough grip on it. As in that wonderful song below:

Do you Know what Fellow he was? 10-years from the Death of My Brother GENNADIY FILIN (1942-2012)

Paraphrasing the well-known Pakhmutova’s song about the First world austronaut Y. Gagarin “Do you Know what Fellow he was?” I would say about my beloved brother Gennadiy. He was an excellent person, good-hearted, with the sense of humour and understanding of life. He was a good father, grandfather uncle. This month a dream about him came to me as if I were running everywhere in search of Gennadiy. I was trying as it was in our childhood, to save him from hardships and difficulties. I used to recollect how once when we were both in a pioneer camp one summer, the bunch of girls came up to me and said: “Go and rescue your bro, he stepped on the broken bottle glass, and blood was streaming out of his heel”. I jumped for help and saved him that time. I was two years older than him. I was responsible for my brother’s health and well-being, so our mother told us. The month of January on the eighteenth it was his birthday, and having celebrated his 70-th anniversary, ten days later he dies of heart attack/ So, January is a virgil candle lit up in our home. In the bright memory of Gennadiy. His photo is to the left and Gagarin’s song below.
These days also come to my mind the wonderful poem by Y. Evtushenko ” The Earth holds not Uninteresting People”
“This Earth holds not uninteresting souls.
Their fates akin planets history-
Each planet is unique on its own,
